An established and highly regarded hospitality destination in County Carlow is seeking an experienced Executive Chef to lead and develop its culinary operation.

This is a senior leadership opportunity within a busy, multi-outlet property that caters to a diverse mix of hotel guests, local diners, corporate events, weddings, conferences, and special occasions. The successful candidate will have full responsibility for the strategic and operational management of all kitchen functions, ensuring exceptional food quality, consistency, profitability, and team performance.

Key Responsibilities

  • Oversee all culinary operations across multiple food and beverage outlets.
  • Lead, mentor, and develop a large kitchen brigade, fostering a positive and high-performing culture.
  • Drive menu development and innovation while maintaining strong commercial awareness.
  • Ensure the highest standards of food quality, presentation, hygiene, and service delivery.
  • Manage food cost controls, labour budgets, stock management, and supplier relationships.
  • Work closely with senior management to support business objectives and enhance the guest experience.
  • Ensure full compliance with HACCP and all relevant food safety regulations.
  • Support and deliver high-volume wedding, conference, banqueting, and event operations.

Candidate Profile

  • Proven experience as an Executive Chef or Head Chef within a high-volume hotel, resort, or multi-outlet hospitality environment.
  • Strong leadership skills with a track record of managing and developing kitchen teams.
  • Commercially focused with excellent financial and operational management capabilities.
  • Experience overseeing banqueting, events, weddings, and conference catering is highly desirable.
  • Passion for quality food, innovation, and delivering exceptional guest experiences.
  • Strong organisational, communication, and problem-solving skills.
