Executive Chef – Dublin City Centre Hotel
Salary: €60,000–€80,000 DOE
Location: Dublin City Centre
Schedule: 5 days over 7
Our client, a well-established hotel in Dublin City Centre, is seeking an experienced Executive Chef to lead and develop their kitchen operation.
This is a senior leadership role responsible for overseeing all food service areas, including breakfast, lunch, bar food, banqueting, and functions, while managing a team of approximately 20 kitchen staff.
Key Responsibilities
- Lead, motivate, and develop a kitchen team of circa 20 employees.
- Oversee all food operations across breakfast, lunch, bar, and function services.
- Maintain exceptional food quality, consistency, and presentation standards.
- Manage labour costs, food costs, stock control, and purchasing.
- Drive profitability through effective financial management and cost control.
- Ensure compliance with all food safety, HACCP, and health & safety regulations.
- Work closely with senior management to develop menus and enhance the guest experience.
- Recruit, train, and mentor team members to support a positive kitchen culture.
Requirements
- Proven experience as an Executive Chef or Head Chef within a busy hotel environment.
- Strong financial acumen with experience managing budgets, food costs, labour costs, and GP margins.
- Demonstrated success managing and developing large kitchen teams.
- Excellent leadership, communication, and people-management skills.
- Experience overseeing banqueting and high-volume function operations.
- Strong organisational skills and the ability to perform under pressure.
- Passion for quality food, innovation, and continuous improvement.
