About the Role
We are recruiting an experienced and passionate Sous Chef to join the culinary team of a prestigious 4-star luxury hotel in County Kildare. Working within the hotel’s acclaimed modern Irish restaurant, you will support the Head Chef in delivering exceptional seasonal cuisine, showcasing the finest locally sourced Irish ingredients while maintaining the highest culinary standards.

Key Responsibilities
- Assist the Head Chef in the day-to-day management of the restaurant kitchen.
- Prepare and present high-quality modern Irish dishes to exceptional standards.
- Lead and inspire the kitchen team, ensuring smooth service during busy periods.
- Train, mentor, and support junior chefs in their development.
- Ensure full compliance with HACCP, food safety, and hygiene regulations.
- Assist with stock management, ordering, and food cost control.
- Maintain consistency, quality, and presentation across all dishes.
- Contribute ideas for seasonal menus and daily specials using fresh, locally sourced produce.
Requirements
- Previous experience as a Sous Chef or a strong Senior Chef de Partie in a quality hotel or restaurant.
- Passion for modern Irish cuisine and seasonal ingredients.
- Strong leadership and team management skills.
- Excellent knowledge of HACCP and food safety standards.
- Ability to thrive in a fast-paced, quality-driven kitchen.
- A creative approach with exceptional attention to detail and presentation.
