About the Role:
We are seeking an experienced and creative Head Chef to lead the kitchen in a renowned high-end hotel located in the heart of Sligo city centre. Known for its refined yet relaxed atmosphere, the hotel’s dining offering embraces a gastro bar-style menu, combining contemporary dishes with locally sourced, seasonal ingredients.

As the Head Chef, you’ll oversee all kitchen operations, from menu design and team management to ensuring the highest standards of food quality, safety, and consistency. This is a fantastic opportunity for a culinary leader who thrives in a fast-paced, innovative environment.

Key Responsibilities:

  • Lead and inspire a small but talented kitchen team, ensuring smooth daily operations.
  • Create and develop seasonal menus focused on fresh, local ingredients and modern gastro bar-style dishes.
  • Ensure exceptional food quality and presentation in line with the hotel’s standards.
  • Manage kitchen inventory, including ordering, stock control, and supplier relationships.
  • Maintain a clean and safe kitchen environment, adhering to all health and safety regulations.
  • Train and mentor junior staff, fostering a collaborative and supportive team culture.
  • Collaborate with hotel management to align the kitchen’s offerings with the overall guest experience.

What We’re Looking For:

  • Proven experience as a Head Chef or Sous Chef, ideally in a high-end hotel, restaurant, or gastro bar environment.
  • Strong leadership skills, with the ability to motivate, develop, and manage a small team.
  • A passion for creating exceptional dishes using locally sourced, seasonal produce.
  • Creativity, attention to detail, and a keen eye for presentation.
  • Strong organizational skills, with the ability to manage food costs and maintain consistency.
  • In-depth knowledge of food safety and hygiene standards.
  • Excellent communication skills and the ability to work closely with front-of-house teams.
