We are seeking an experienced Chef de Partie to join the team at a prestigious fine dining establishment in Co. Clare, renowned for its exceptional culinary standards and commitment to using the finest local and seasonal ingredients. About the Role:
As Chef de Partie, you will manage your section of the kitchen, ensuring that every dish is prepared and presented to the highest standard. You’ll work closely with the Head Chef and Sous Chef to deliver an exceptional fine dining experience, contributing to the seasonal menu and helping create innovative dishes that highlight the best local produce. The position offers the opportunity to work in an environment that values creativity, quality, and professional growth.
Key Responsibilities:
- Run your section during service, ensuring the preparation, cooking, and presentation of dishes meets the establishment’s high standards
- Assist with the development and execution of seasonal menus using fresh, locally-sourced ingredients
- Supervise and guide junior kitchen staff, ensuring they maintain quality and food safety standards
- Ensure your section is kept clean and organised, in line with food safety and hygiene regulations
- Contribute to creating daily specials and innovative menu items that reflect the best of the season’s offerings
- Assist with stock management, ordering, and reducing food waste
- Ensure smooth kitchen operations during service and collaborate with the team to deliver exceptional food to guests
What We’re Looking For:
- Proven experience as a Chef de Partie, ideally with fine dining experience
- A passion for cooking high-quality, seasonal dishes
- Strong organisational and leadership skills, with the ability to manage a section during service
- Knowledge of food safety, hygiene, and health & safety regulations
- Ability to work efficiently under pressure, maintaining high-quality standards
- Strong communication and teamwork skills
- A desire to grow and develop within a fine dining environment
- Flexibility to work evenings, weekends, and during peak service times
Salary & Benefits:
- €36,000 per year
- Subsidised accommodation on-site
- Meals on duty and on your days off
- Two months off in winter
